Consumers’ valuation for low - carbon emission and low – saturated fat butter

Currently, there is an ongoing debate related to the large environmental impact of livestock greenhouse gas (GHG) emissions and negative effect saturated fat contained in animal foods on human health. In response these adverse effects, dairy producers have adopted strategies reduce effects by modifying conventional feed composition. This study investigated, for first time, Finnish consumers’ willingness pay (WTP) heterogeneous preferences butter derived from milk produced cows fed with lipid-rich rapeseed feed, hereafter called which can GHG cows, content products. Using a hypothetical choice experiment (CE) involving that varied across four attributes (i.e. type content, Carbon Trust label, price), our results show that, average, consumers preferred low-price butter, regular labelled claim “Reduced fat”, branded “Carbon Trust” label.
